Maybe this should go in the DIY heading.

I would love to build my own simple, mono tube amp. I don't need it too powerful either, but I want it to be as noiseless as possible. I'm a fair woodworker, designing and building high-end furniture, ....and I would create a unique/bazaar case for it which would showcase the tube(s). If a stereo unit is easier (for some reason), that would work too.

Is there a simple plan out there that might accommodate these parameters? Are specs about the speakers needed to answer this?

Any suggestions would be welcomed!

There are loads of expressions like "Less Is More", "K.I.S.S." etc and it is easy to understand that the simpler, the easier it is to have every parameter under control.
However a stereo amplifier is more useful than a mono amp and a single end easier and simpler than a pushpull.

Going VERY simple would be to go to one-tube-amps like using 6EM7, ECL82/86 or use a single dual-triode driver tube with a single dual-triode power tube (12AT/U/Y7 + 5998A/6AS7G ...).

Just some general ideas.

My 'mono' preference is due to wanting a small amp for speech only. I am also needing a single speaker with frequency response between 60 Hz to 7500 Hz only. Sure, stereo would allow me to enjoy music as well, but I'd need two good studio monitors to get the results. Right now, just want to reproduce voice (not singing).

I looked at the images of the amp you suggested and that is exactly what I envisioned.

Go for a ECL82/6BM8. They should be found pretty cheap. A transformer (two) can be found everywhere, like the Hammonds 125-series or the Edcor XSE series. Both types will do an excellent job.

An amp based on the 6F5P (Russian) works well for about 2 watts. It is a triode plus pentode. A sub for the 6GV8 and ECL85

Maybe you should have a look at guitar amplifier circuits. They are mono, they work within the frequency range you stated and are very simple when you remove the tone adjustment from the equation. Schematics and wiring diagrams are readily available on the internet, and manufacturers like hammond have complete lines of replacement output transformers. You get pretty much the exact opt for the circuit you chose. And for around 30-40$
