I havent seen anyone do this but the Cs cap should not go below 20uf. So 100uf should be fine. Maybe get some 1000uf and see what is sounds like. People use all sizes, but this cap "provides power supply filtering and bypassing."
Peter Daniels who seems to be a proven guru on this chip uses 1500uf. So try out a few but you will honestly be fine with almost any size electrolytic. If you want to save a little money just use what you have lying around if they are of the same capacitance.

Yes, 80VA per channel is typically the starting point. I like ~100uF on the chip and then ~10,000uF min in the PS.
